Do.t.e stands for Down to Earth and the wines come from a 2ha terraced vineyard
in Cortona.
Vinification takes place in a range of vessels from tank to barrique and
porcelain barrel. Whole cluster fermentations. Zero added sulphur.
Syrah and Viognier harvested together on September 4th. Spontaneously co-fermented whole clusters (full carbonic maceration) in stainless steel.
7 days of skin contact, “aged” 1 month in stainless steel. Bottled in a clear glass champagne-like bottle, under crown-cap, without clarification and filtration.
This is the second year that Filippo made a 'Beaujolais style' wine, but from Tuscany!
After the first year of making a wine in this style, people went mad for it - so he did it again.
