Samuel billaud is one of the best and most respected winemakers in Chablis!
Originally plying his trade under his family flag at the famous Billaud-Simon, he didn't see eye to eye with the family at times so decided to branch out on his own and acquired some vineyards in the classic burgundy area of Côte d'Or.
As a member of one of the longest established families in the region, he is also able to source top quality fruit from other growers. This access to great terroir gives the wine exceptional purity and great tension!
The grapes are sourced from there parcels of vines in different sectors of the appellation.
This Chablis is made using Chardonnay vines planted between 1952 and 1987 in limestone souls and cultivated to the principles of respectful agriculture.
The wine is fermented with native yeasts and left on the lees.
Crisp, dry, mineral, medium to full bodied, fleshy, fragrant and floral, flavours of apple, pear and citrus with refreshing acidity and great length!
