After travelling some of the world’s best wine and surf regions in a VW campervan, Taras and Amber Ochota decided to head home to South Australia to make McLaren Vale Grenache and Barossa Valley Shiraz.
Following a misspent youth playing a rickenbakker bass in various punk bands, Taras worked at a number of wineries including Nepenthe in the Adelaide Hills, Two Hands and MSV in the Barossa. California has also been a big influence.
Taras has made wines with producers such as Hartley-Ostini, the famous Hitching Post label, made famous by the ‘Sideways’ film.
Most of the Ochota Barrels wines are named after favourite bands or songs.
Taras says, “You can often see the styles of music people like in the wines they make. I like edgy music, raw, sharp music, and my wines tend to be all elbows and knees sticking out”.
Less than 400 cases of this wine are made, from vines planted in 1946. Grapes are handpicked early in the morning from three sites in the western reaches of the Vale. Soils are red loamy clay with ironstone over deep limestone.
Fermentation is 85% whole bunch, cold soaked for four days. Fermentation occurs spontaneously and the wine spends 28-88 days on skins, pigeaged and hand plunged. It is basket pressed to neutral barrels for 2 months of ageing. Bottled unfined and unfiltered with minimal sulfur.
