Ultimate Club Sandwich
Sandwich of the kings!
Layered goodness! Don’t skimp on good quality ingredients here just because it’s a sandwich! Make it stand out. Make it delicious.
Serves 2



  • Splash olive oil
  • 6 rashers smoked streaky bacon
  • 2 small free-range chicken breasts, halved horizontally
  • 3 large tomatoes, sliced
  • 4 sundried tomatoes
  • 6 slices good-quality bread, toasted
  • 3 tbsp mayonnaise
  • Butter for spreading
  • 1 avocado, mashed
  • 6 crunchy lettuce leaves
  • 2 eggs
  • 4 slices white cheddar cheese


  1. Place 2 eggs in a pot covered with cold water.
  2. Bring to the boil and heat to a gentle simmer for 5 minutes.
  3. Remove from the water and let cool so you can peel the shell.
  4. Heat your oil in your pan over medium heat.
  5. Fry your rashers until crispy then remove and set aside.
  6. Preheat your grill to high.
  7. Add your chicken to the pan and cook for 4 minutes before flipping and cooking next side a further 4 minutes.
  8. Set aside with your bacon.
  9. Add your sliced tomatoes to the pan for a quick minute, just to heat slightly.
  10. Set aside.
  11. Put your 6 slices of bread under the grill.
  12. Once lightly toasted, flip and add your cheese to 2 of the slices to melt.
  13. Once they are all toasted remove from the grill and onto a chopping board.
  14. Spread mayo over 2 slices and butter over 2 slices.
  15. Build your sambo.
  16. Slice your boiled eggs.
  17. Start with your buttered toast at the bottom.
  18. Then go with half the chicken, all of the avocado, egg and your tomato.
  19. Then add the mayo toast.
  20. Add the rest of the chicken, the bacon, the lettuce and the sun dried tomatoes. 
  21. Finish with the cheesy toast.
  22. Cut in 4 diagonals and skewer to keep them upright!
