Staffelter Hof is one of the oldest recorded wineries - dating back to the year 862 AD, almost 1,200 years old!
It taken over by the current family in 1805.
Jan Matthias Klein took over from his father in 2005, and continued to make classic Mosel wine until 2010.
Since then Jan's farming has been organic and certified as such since 2014 and he moved to a minimal intervention style of winemaking.
All the vineyards are now farmed biodynamically and production is divided between classic wines - though now made with minimal intervention - and the newer, experimental, natural wines that Jan loves.
The grapes are destemmed, and one third of the wine is fermented on
its skins for two weeks whilst the rest is direct pressed.
Fermentation and aging both occur in steel tanks.
The wine stays on its lees for six months prior to bottling.
Unfined, unfiltered, no added sulphites.
