Boujee Creamy Chicken & Mushroom Pasta
Another dish we seem to make far too often. Especially when we’re trying to diet.
Flavours here are just too good to run from. Garlic, butter, mushrooms.
We also make a delicious alternative where we take 2 large roasted red peppers from a jar, with a little bit of the oil from the jar, into a blender and blitz. Add this to the creamy sauce to create a delicious alternative which is bright pink in colour!

We like to pan fry this baby and serve it with a delicious potato rosti. James Martin has a banging recipe for it also with salsify which we’ve made many times but we tend to favour this!

Straight from the horse's mouth. Alain Ducasse’s Goujeres. Don’t know why he is the horse. I just wanted to use that phrase.
I also f*cking love saying Gruyere Goujere. Try it. 
Great nibble snack for people to enjoy with a drink!
You need a pastry bag to pipe these.

Classic Butter Chicken
If ever you see someone eating in an Indian restaurant for the first time and they’re scared they’re going to burn the sh*t out of themselves or upset their stomach, they order butter chicken. Every time. Lucky for them it is delicious! Lightly spiced and comforting it is a winner winner chicken dinner.

Lamb Casserole
Our Irish stew recipe can be done with lamb instead of beef the same way and is just as delicious. This recipe is just slightly different than our stew recipe however. Same wine pairing in the Carte Blance Syrah works beautifully with both.

Sole Meuniere
One of our favourite things to eat, at home or out. When we see this on the menu at a restaurant we love it! Cracking recipe not many people cook at home, so it makes you look like a good cook! But it’s actually fairly easy. This recipe we learned from Rick Stein book fish and shellfish!

Like I said before, growing up my mother’s cooking tended to be scheduled and there was 2 nights a week we’d have Irish stew.
Weirdly, my brothers and I used to hate it! Probably because we just wanted chipper every night as kids.
Now we f*cking love it!!!
Great weekend dish. Takes ages on the heat, open some beers, watch the football, happy days.

Ideally this should be done on the bbq. Adding that smoky flavour.

Grew up thinking this was some American luxury we couldn’t get in Ireland!
There were places in London famous for it, high end joints that charged an arm and a leg for this sh*t!! 
I mean it is tasty for sure, but going to a 5 star hotel, whose restaurant is owned by a famous London chef, with multiple michelin stars, and ordering f*cking mac and cheese.

Simple and fresh. Summer recipe. Early Sunday get together with some nice vino and bowls of this stuff! 
Also reminds me fondly of my time working in a boutique hotel in London. The ceviche’s the chef put up were mind blowing!

Soy Salmon en Papillote
Lockdown was sh*te as we all know. 
We were lucky enough to have a neighbour who owns Wright’s of Marino!!! 
I would ring him on Monday and order what I was feeling for a few days and he’d drop it off on his way home. It was unreal!
The salmon he delivered was the winner all day long. 
We made this recipe many many times during lockdown as it takes a small bit of prep but is then very easy! And we were generally too drunk to cook anything that took any more effort.
