Wine Pairing - Séléné Chardonnay Beaujolais Village

Ingredients

  • 300g pasta (Spaghetti or linguine work best)
  • 2 ½ tbsp pesto
  • 2 tbsp olive oil
  • 75g onion, finely chopped
  • 2 cloves garlic finely chopped
  • Salt and pepper
  • 2 tbsp parmesan

Method

  1. Bring a large pot of cold salted water to the boil.
  2. Add pasta and cook for 1 minute less than the packet says.
  3. Before draining scoop out about 175ml of pasta water.
  4. Set aside.
  5. Drain pasta and set aside in bowl.
  6. Heat a pan over medium heat.
  7. Add your olive oil and when hot add your onion and garlic.
  8. Cook for about 5 minutes while stirring until onion and garlic are soft.
  9. Add your pesto and season with salt and pepper.
  10. Lob in your pasta sauce and mix well to combine. 
  11. Throw in your pasta now and toss to coat well.
  12. Should be nice and silky and saucy.
  13. Season with salt and pepper if needed and garnish with grated parmesan.
