Pronounce it however the f*ck you like to. Couldn’t get more simple. My blind goldfish could make this. It is still delicious though and a summer winner for a group with a lovely bottle! Especially the delightful pink wine we stock!
Serves 4

Ingredients

  • 3 medium tomatoes, roughly chopped
  • ½ small red onion, finely chopped
  • 4 tbsp olive oil
  • 2 cloves garlic, halved
  • 4 tbsp olive oil
  • 1 tsp balsamic
  • 6 basil leaves, chopped
  • 1 tsp salt
  • ½ tsp cracked black pepper
  • 1 french baguette or italian style bread to be proper proper

Method

  1. Grab a large bowl and lob in your tomato, onion, garlic and basil.
  2. Add the balsamic and oliv oil.
  3. MIx well.
  4. Add salt and pepper.
  5. Mix again.
  6. Cover and refrigerate for at least 2 hours.
  7. Slice your bread evenly for toasting.
  8. Toast under the grill so you can keep an eye on them.
  9. Lightly brown on both sides.
  10. DO NOT BURN TOAST FOR GOD’S SAKE.
  11. Lay your toast out and spoon the tomato mix over them evenly.
